Kale is one of the world's most nutritious and healthful vegetables, being high in vitamins, minerals and antioxidants. Kale can be eaten both raw or cooked, but the stalk should be removed as it is tough to eat. If eating raw, massage the kale with some lemon juice and olive oil to soften.
