Bitter Melon is closely related to the courgette and cucumber family, and has a distinctive bitter taste. It can be steamed or pan-fried like courgette, or hollowed out and stuffed with a filling. It matches well with other strong flavours like chilli or fat, and is used a lot in curries. To prepare, slice the melon in half and scoop out the seeds with a spoon, or alternatively cut into thick rounds and core out the seeds to stuff.
