Healthy n Fresh Wood Ear Mushrooms
25g butter
1 clove
Healthy n Fresh garlic, peeled and finely chopped
OR1 tsp
Healthy n Fresh crushed garlic
spring onions
2 eggs, beaten
2 tsp light soy sauce
pepper, for seasoning
A drizzle of sesame oil
A handful
Healthy n Fresh Coriander leaves, torn
Method
- Chop mushrooms into bite sized pieces or slice into strips, discarding any hard stalky bits.
- In a non-stick saucepan, over a medium flame, melt a large knob of butter until completely liquid. Into this add the garlic and mushrooms and sliced spring onions. Saute for 30 seconds or so. Then add light soy sauce , pepper and eggs. Keep agitating the eggs in the saucepan with the mushrooms until just set (but not overdone or rubbery).
- As soon as they are done, add a few drops of sesame oil, and serve - this will add a wonderful aroma and nutty taste. Finish with some torn coriander sprinkled on top.
