Stir-Fried Water Spinach

  • 450g water spinach 
  • groundnut oil 
  • 4 shallots , finely sliced 
  • 2-3 garlic clove , finely sliced 
  • 1 tbsp rice wine 
  • 1 tbsp oyster sauce 
  • black pepper


  • If using water spinach, slice the bunch in half, separating the stalks from leaves. 
  • Heat 2 tbsp oil in a large pan or wok until hot, add the shallots and fry for 1 min then add garlic and fry for a further 30 seconds. Throw in the spinach and fry for 2-3 minutes until it starts to wilt. Add the rice wine, oyster sauce and a couple of grinds of black pepper, toss
